Indian Peanuts

Peanut in Shell

The peanut has an exterior hull (or shell) (21-29%), which surrounds the nut (79-71%). Peanut hulls are a byproduct of peanut processing, not to be confused with peanut skins (which are the thin paper-like seed coverings surrounding the kernel). Shelling peanuts is frequently the second (after cleaning) operation in peanut processing since both the manufacture of peanut oil and the creation of germ snacks, peanut butter, and other peanut-based foods require kernels without hulls (save for the production of in-shell peanuts). Peanut hulls are often fractured hulls with varying percentages of entire or broken kernels.

Varieties of Peanuts

Bold (runners) and Java (Spanish) are the two most common types of peanuts grown in India. Bold variety peanuts have reddish brown skin and an oblong form, whereas Java variety peanuts have pink skin and a spherical shape.

India’s main oilseed is bold peanuts. It accounts for around 25% of the country’s total oil seed production. The annual production of India Peanuts and Indian Peanut oil is around 5-8 million tonnes and 1.5 million tonnes, respectively.

Blanched Peanuts

Many nuts, such as almonds, peanuts, and hazelnuts, are grown in shells. When the shell is removed, the nutmeat still has a skin on the exterior. Blanching is a method of removing the skin from nut flesh.

So, how exactly do you blanch a nut? The procedure involves blanching the nuts in very hot water for approximately a minute, then rapidly chilling and wiping off the peel.

Neither, in fact… It all depends on whether you intend to prepare or nibble on the nuts. Blanched nuts are generally used in cooking and baking. If the nut has not been blanched and the skin remains on, the skin will detach during cooking. Your baked treat is now a husky mess.

Origin of Peanuts with production

Peanuts are nutrient-dense, containing over 30 important elements and phytonutrients. Peanuts are high in niacin, folate, fibre, magnesium, Vitamin E, manganese, and phosphorus. They are also naturally low in trans fats and salt, and contain around 25% protein.

Peanuts are processed into a variety of products, including peanut butter, flavoured peanuts, coated peanuts, peanut bars, chocolate spreads, nut biscuits, and crushed nuts for use in cakes, buns, ice cream, and desserts.

The peanut, also known as the groundnut and the goober, is a legume crop farmed primarily for its edible seeds and is taxonomically designated as Arachis hypogaea. It is commonly grown in the tropics and subtropics, and it is vital to small and large commercial growers alike. It is designated as both a grain legume and an oil crop due to its high oil content. In 2014, the global yearly production of shelled peanuts was 42 million tonnes. Peanut pods develop underground rather than aboveground, which is unusual among agricultural plants. Linnaeus, the botanist, gave this trait the particular name hypogaea, which means “under the earth.”

The peanut, being a legume, belongs to the botanical family Fabaceae, often known as Leguminosae and generally known as the bean or pea family. Peanuts, like most other legumes, have symbiotic nitrogen-fixing bacteria in their root nodules. Because of their nitrogen-fixing ability, peanuts require less nitrogen-containing fertilizer and enhance soil fertility, making them useful in crop rotations.

Peanuts are similar in taste and nutritional profile to tree nuts such as walnuts and almonds, and are often served in similar ways in Western cuisines. The botanical definition of a “nut” is a fruit whose ovary wall becomes very hard at maturity. Using this criterion, the peanut is not a true nut, but rather a legume. However, for culinary purposes and in common English language usage, peanuts are usually referred to as nuts.
